How to Use Lavender in Savory Dishes
Culinary lavender can be magical in savory dishes, adding a subtle floral note that feels unexpected and sophisticated. The key is restraint. Too much lavender can quickly dominate a dish, turning it soapy or bitter, so measure carefully and focus on balance. For fish like ahi tuna, just a small sprinkle of finely ground lavender works beautifully to highlight the natural flavors of the fish without masking them.
Lavender also pairs surprisingly well with sweet and tangy elements, which is why it complements the vinaigrette on the shaved zucchini salad so effortlessly. When using it in a spice mix, grind it finely with sugar, salt, and other spices so the flavor disperses evenly across the dish. This technique ensures every bite has a whisper of lavender rather than an overpowering punch.

Perfect Wine Pairings for Sweet and Sour Lavender Ahi Tuna
This dish calls for wines that can keep up with its delicate yet bold flavors without overpowering the tuna or the salad. A crisp Sauvignon Blanc is a natural choice, with bright citrus and herbal notes that complement the sweet and tangy vinaigrette while enhancing the floral hint of lavender. It refreshes the palate between bites and balances the richness of the seared tuna.
For those who enjoy a touch of creaminess in their wine, a Chardonnay also works beautifully. Its soft texture and subtle vanilla or buttery notes add depth to the dish, while the acidity keeps the flavors lively and vibrant. Both wines are versatile enough to highlight the salad’s crisp zucchini and carrots, making every bite feel harmonious and intentional.
Matanzas Creek’s portfolio is full of wines that shine in similar pairings, from bright, zesty whites to elegant, fruit-forward reds. Exploring their selections is a great way to find a perfect match for dishes that balance sweet, savory, and floral flavors, turning a simple meal into a memorable tasting experience.
