In 1991, Matanzas Creek planted the spectacular, terraced lavender gardens that greet visitors as they arrive at the winery. An integral part of the estate, the lavender is planted in harmony with the land and farmed organically to preserve the essence of the local ecosystem.
Once the lavender reaches full bloom, it is hand-cut for use in culinary, bath, body and home products. The entire plant is utilized from the stalks, which produce grilling sticks to infuse lavender flavors into poultry, lamb and vegetables, to the flowers and seeds, which are handcrafted at the estate into unique bath and spa products.
